Day two is hands-on. This is where knowledge becomes action.
The morning begins with processing tuna — learning practical skills around preparation, preservation, and utilisation of kai.
From there, workshops and sessions will focus on building real pathways to access kai:
Workshops and kaupapa may include:
Butchery and processing skills (including small-scale and micro-abattoir models)
Growing kai — from backyard to hapori-scale systems
